Recipe: Easy Potato Latke

I LOVE latkes, but they are a pain in the ass to make. Shredding potatoes and squeezing the water out of them is just no fun. So I came up with this easy recipe all by myself after I made WAY too much mashed potatoes.

 

 

What you need:

  • Day-old mashed potatoes (DO NOT USE INSTANT FLAKES)

  • 1 onion, chopped

  • 2 eggs

  • ½ cup or more matzo meal or flour (I just eyeball it)

  • 1 tbsp schmaltz (chicken fat) or duck fat per batch of potato pancakes

  • Applesauce and sour cream for serving

  1. Combine mashed potatoes, eggs, onion, and flour (or matzo meal) in a large bowl. Make sure everything is evenly mixed.

  2. Meanwhile, heat the schmaltz in large skillet.

  3. Scoop out a desired portion of latka mix and place in skillet. Four latkes should be able to fit easily in your skillet. Brown on each side then place latkes on a paper-towel-covered plate.

  4. Repeat till you are out of mixture.

Serve with applesauce and sour cream. Bon appetit!
