Recipe: Soy Sauce Ginger Chicken

Have you been looking for that all-in-one Instant Pot recipe that only takes 20 minutes to make? Then this is it! My mom used to make this for me growing up, and I always looked forward to it. It was the perfect blend of western and Chinese cooking (great for picky eaters as well!), and here, I’ve converted it into an Instant Pot-worthy recipe:
Soy Sauce Ginger Chicken
2 lbs of chicken
1 lb of shiitake mushrooms
1 tablespoon of cooking oil (I use canola)
Pepper to taste
3 tablespoons of soy sauce (I prefer mushroom soy sauce)
4 tablespoons of oyster sauce
¼ cup of Chinese cooking wine (if you can’t get it, use red wine)
1 cup of water
¼ cup of ginger, sliced
2 teaspoons of sesame oil
3 scallions chopped (for garnish)
Set your pressure cooker to “Sauté” mode, and add oil.
Sauté chicken for several minutes on both sides, adding pepper to taste.
Add all other ingredients except for scallions.
Set to pressure cook on “high” for 20 minutes.
Release pressure (be careful!), and then open lid.
Set cooker to “Sauté” again, and stir in chopped scallions.
Serve, and Nom on!
