Recipe: Matcha Mug Cake

You’ve got leftover matcha from making all those holiday cupcakes. Now what to do with it? After reading this hilarious Reductress piece, you should make yourself a mug cake!


What’s a mug cake, you ask? It’s the laziest cake you can imagine. Mix all your ingredients in a coffee mug and microwave it. Seriously, that’s it. Nothing spectacular or time consuming. Just pop that sucker in the microwave, and baby, you’ve got a mug cake!

I’ve adapted this recipe from here, so the cake is more like a dense bread. Which make me feel way better about eating mug cake for breakfast. You can also sprinkle matcha on top, or add syrup like I did. #LazySunday. #HappyStPaddysDay

Matcha Mug Cake
You've had a long day. Make yourself a mug cake!
  • 1 Tbsp Coconut Oil (melted)
  • 1 Tbsp Milk
  • room temperature 1 egg
  • 1/2 Tbsp Matcha
  • 2.5 Tbsp Flour
  • 1/8 tsp Baking Soda
  • pinch of salt
  • 1.5 Tbsp Sugar
  • 1/8 tsp Vanilla Extract
1. Mix matcha powder, flour, baking soda, salt and sugar in your favorite mug. 2. In a separate cup, whisk oil, milk, vanilla extract, and egg together with a fork.3. Create a well in the dry ingredients, add the wet, and mix until smooth.4. Microwave for 1 ½ minutes. Let sit for one more minute before eating! *Optional- Sprinkle some matcha on top!
